These vegetables are preserved immediately after harvest and their preservation method guarantees the freshness and the original colour of the vegetables, adding an incomparable crunchy texture. The main characteristics are the acidified flavor marked by genuine Portuguese wine vinegar and a striking aroma of the mixture of fine vinegar and vegetables.
