Ayama Carignan
The exceptional terroir of the Voor Paardeberg ward, as well as the grapes cultivated in the area, has been the source of various international wine awards. It is the location of this ward that makes it so unique. The mountain slopes of the Paardeberg, together with the soil composition and prevailing winds, create a specific quality in the grapes. The wines produced at Ayama have the potential to be part of the elite wines of the country.
GRAPE VARIETY: 100% Carignan from our own vineyards
SOIL TYPE: Gravelly, well-drained soils, as well as Paardeberg Mountain sandstone
VINIFICATION: Harvested early morning, healthy grapes came in at optimal ripeness at the end of March. The juice is fermented in stainless steel. Aged in 500 litres 3 years old barrels for 24 months. The wine is bottled in spring
SERVING SUGGESTIONS: It is delicious paired with roast meats, duck and earthy root vegetables
TASTING NOTES: Carignan is an expression of dark cherry fruit, blueberries, violet and other floral aromas along with notes of orange peel, black liquorice and cocoa. Well bodied with tannins that have a fine, dusty aspect and fresh and lively acidity
with excellent potential for ageing
