Character: Medium Fruity, complex.
Biophenols: >400 ppm.
Tasting Notes:Aromas of green herbs, roasted vegetables tomatoes and green banana. Palate of chicory and radicchio; moderate lingering chilli spiciness. Nutty aftertaste. Balanced, harmonious and complex.
Culinary application: Great all-round cooking and finishing oil, across medium and strong tasting dishes. Excellent with red and white meats, sauces, casseroles, roasted vegetables, tomato based cuisine and bean and leaf-based salads, in baking, desserts and with medium and delicate cheeses such as Gouda and ricotta.
